Ingredients
- 200g fresh crab meat
- 3 small bell peppers – the more colour variety you have- the better, make sure you de-seed them and slice length-wise and then chop. I used three different colours- yellow, red, orange for maximum rainbow effect!
- 2 small jalapeños, de-seeded and sliced
- 1-2 tbsp extra virgin olive oil
- sea salt and black pepper
- to taste
- garnish with a herb of choice- I would go for coriander but chives work perfectly too
- 2 limes, juice
Method
Open a chilled crab container, place your serving plate on top, and tip over. You should have a round stack of crab meat. Place colored peppers around it, with spicy jalapeños on top. Pour lime juice and olive oil on top. Sprinkle with a generous amount of sea salt to counterbalance the acidity of the lime and add freshly ground black pepper. Add extra herbs if you wish!
