Porridge Oats With Stewed Apple And Pecans

Ingredients

  • 1 large apple, cubed
  • juice of one blood orange
  • ½ cup water (may require more)
  • 1 tsp vanilla essence
  • pinch of cinnamon
  • 8 pecan halves (or walnuts)
  • ⅓ cup porridge oats
  • 2 heaped tbsp of oat bran
  • 1.5 cups of cashew milk (or milk of choice)
  • 1 tbsp maple syrup
  • pinch of sea salt
  • fresh raspberries for garnish (optional)

Method

For stewed apple
Place chopped apple in a pot with the juice of one orange, pecans, water, vanilla essence and cinnamon. Cook on a slow heat until liquid has been absorbed and the apple has been cooked through, just enough so that the apple is soft but still intact.

For porridge
Place oats, oat bran, and milk in a pan and bring to a boil. Allow to simmer for 5 minutes stirring continuously. Add a drizzle of maple syrup, and a little salt and mix well. To serve, place porridge in a bowl and add stewed apple and pecans on top. For extra sweetness add more maple syrup or honey. Add some fresh raspberries on top and some extra cinnamon. Enjoy!
